I am going to have to try this one this week :)
YUM!
In a small pot heat up 1 pack of frozen chopped spinach with a bit of water (about 2 tbs) over med heat.
Stir occasionally until spinach defrosts.
Put thawed spinach in a strainer and use a spoon to push out the excess water.
Return spinach to pot and add 1 bar of reduced fat cream cheese.
Mix & stir until cream cheese melts.
Add 1/2 can of artichoke hearts (quartered) & salt and pepper to taste.
That's it!
If you want to fancy it up a bit you can put it in an oven safe dish, sprinkle with Parmesan cheese & bake at 350 degrees until the cheese browns & bubbles.
Oh, and here's another tip, instead of regular tortilla chips try the Tostito's 'hint of lime' ones, the tang with the creamy dip is super yummy.

side notes :
I have been getting emails lately letting me know that my blog does not show up as "updated" in their blog list...I am SORRY I don't know why this is a problem and not quite sure how to fix it...I am looking into it though.
That dip is my all time favorite food to take to parties. I add minced garlic, and shredded mozzarella cheese too. :)
