I am really excited to be guest posting today. One of my favorite things to do is cook. However, I am extremely busy, so I try to come up with quick unique meals. One of my go-to staples is roasted garlic.
I am really excited to be guest posting today. One of my favorite things to do is cook. However, I am extremely busy, so I try to come up with quick unique meals. One of my go-to staples is roasted garlic.
Here is how I do it:
I take two pieces of foil, and lay the pieces on top of each other. i then take a handful of peeled garlic cloves and drizzle with a little bit of olive oil. I generously salt and pepper the garlic. I add lemon wedges and top with fresh rosemary.
I then seal the foil into a little pouch, and place in a 350 degree oven for about 45 minutes. When you take the pouch out, remove the lemon, and mash the garlic into a paste. Squeeze a little lemon juice in, and add a little bit more of the olive oil.
One of our favorite ways to use the roasted garlic is on toasted sourdough, with thin slices of tomato, and topped with a poached egg. Makes a great brunch, or dinner if you add a side salad.
Roasted garlic is the best :)
