Red, White & Blue Cookie Bark

I love the Fourth of July. Maybe it has something to do with the fact that my ancestors came over on the Mayflower and I have relatives that fought in the Revolution War but I love America!!
We usually spend the Fourth of July at the Oregon Coast with a bonfire and making s'mores on the beach watching the fireworks. During the day there is a BBQ and a good old fashioned, small town 4th of July parade!
What better way to celebrate the Fourth than with some red, white and blue food and treats!?
Another thing I love (I love a lot of things) is the combination of sweet and salty. Last year at Halloween I made some Candy Corn Cookie Bark, a great combo of white chocolate, pretzels, Oreos,and candy corn (another thing I love). I loved it so much I had to make a Christmas version - Reindeer Corn Cookie Bark. I couldn't wait to try Cupid Corn Cookie Bark on Valentines Day. Then when my neighbor called to tell me she had found Easter candy corn I knew there would be some Bunny Cookie Bark.
Well, to round out the year we needed something for the Fourth of July -Red, White and Blue Cookie Bark. (I'm open to suggestions for a better name)
The best part is how easy it is to make. I used my Silpat on a cookie sheet or you could cover the cookie sheet with parchment paper. Just crush up about a dozen Oreo cookies and several hand fulls of pretzels. I used vanilla melts from the bulk food section of my grocery store or you can buy the Wilton Melts at the craft store (about l lbs worth.)
Melt the chocolate in the microwave and then pour over the top of the broken cookies and pretzels. Sprinkle with M&M's (or candy corn) and then with red, white and blue sprinkles.
(Be aware, a lot more blue M&M's come in a package than red, about twice as many!)

Let the chocolate harden and then break into pieces, place in a pretty container and enjoy.
It makes a great treat for a holiday party or to give as a gift. Get creative and think up your own combination of sweet and savory for some cookie bark. Let me know what you come up with.

ReplyDeleteJust made this last night on a jelly roll pan and doubled the recipe. Walmart sells a 2 lb brick called Plymouth Pantry Vanilla Bark for $2.88. It took two of those to cover it. I weighed it too...5 lbs. of yummy!

I included my five-year-old son and his friend in making these today. They had a great time crushing the pretzels and cookies. The recipe turned out perfectly and really cute to look at. I used white chocolate chips, warmed with a bit of shortening over very low heat. I needed two bags of chocolate chips to cover the mixture. The boys loved it.
